Banana Muffin (A keeper recipe)

As I have some bananas, I decided to make quick banana muffin for breakfast. This is so well received by Bryan and DH. The following recipe is modified from the version found in All Recipes.com

Banana Raisin Choco Chip Muffin (make 11)
Ingredients
1.5c       Flour
1tsp       Baking Soda
1tsp       Baking Powder
1/2 tsp   Salt
3            Large Mashed Banana
1            Egg
1/2c       Castor Sugar
100g      Butter (melted)
1tbp       Raisin
1tbp       Chocó-chip

  1. Warm your oven to 180°C and line your muffin trays
  2. Mixed and sieved all the dried ingredients into a mixing bowl. *
  3. In another bowl, mashed the banana. Then add in an egg which has been lightly beaten.
  4. Stir in the melted butter** and the castor sugar
  5. Now you can add in the raisin and Chocó-chip
  6. Fill up the muffin cup to ¾ full.
  7. Bake in the heated oven@180°C for 25-30 min.
  8. Serve them while it’s hot. Enjoy J
Tips: 
*You can shortcut this by add all ingredient into a mixing bowl, then use a chopstick and stir around for 20 times. That will help to mixed the dried ingredient together and loosen the flour
**Set the temperature to the lowest, and microwave the butter

Today while having breakfast, he kept on telling me "mummy, eye! eye!..." I pointed to my eyes and repeat to him "eye" but he shakes his head. Hmmmm...can you guess what is his "eye"?

Japan we are coming

We have discussing of this trip for so long. At last this year, we made up our mind and bought our ticket to Osaka. So, we are going to Japan next May. Hooray!!!

We are going to bring Bryan boy along for this trip. We will be staying with my host parents in Wakayama for 3 days before proceeding for our family trip to Kansai for 5 days. A lot of planning to be done.

Feeling so excited already!Can’t wait for the day to arrive!!

The other day, this subject matter pop up during our casual conversation about my maternal Grandma "Po Po". Ever since Aunt L passed away, Po Po has stayed with my elder uncle. Now they are talking about who should be taking care of Po Po for long term. I really do not understand why this is always an issue in most of the chinese family. There are so many brothers and sisters, and yet none of them are willing to take care of her willingly.

Suddenly, I have this thoughts troubling my mind. How do I feel about having my parents to stay with me when they are old and immobile?

The truth, I'm abit afraid of that day to come. I'm not sure how will I handle this situation especially with my dad. Mum is not demandful like my dad and more positive thinking. She adapts to the situation rather than complain. Dad will do the other way round. I feel that he is getting more and more selfish as his aged.

I hope I will find my peace of this thoughts soon. God you shall guide me to do the right things...
